Ground Beef And Pepper Skillet

Here is what we had for dinner tonight. It is another recipe from The Four Ingredient Cookbook. http://www.fouringredientcookbook.com/. It was good but I think I would like it better over rice. I added a little salt and pepper to the meat and veggies before I added the gravy. Turned out pretty good.

Here's what you need:
  • 1 lb lean ground beef
  • 1 small onion
  • 1green pepper
  • 1 jar (12oz) mushroom gravy

Here's what you do:

Brown ground beef, onion and green pepper. Drain


Add gravy and simmer for 20-30 minutes.


Serve over rice or noodles. The noodles were good but I think rice would be better. :)

Chicken Nacho Bake

This is another great recipe from http://www.kraftfoods.com/. As you can tell, I love recipes that are super quick and easy but seem like they took a long time to make. Ha! We love Mexican food around here so this recipe was a hit. Very flavorful but so quick and easy. Once again, recipe and picture are from Kraft. :)






Here's what you need:
  • 4 small boneless skinless chicken breast halves (1 lb)
  • 1/2 cup salsa
  • 1/4 cup sour cream
  • 1/2 cup crushed tortilla chips
  • 1/2 cup Mexican style shredded cheese

Here's what you do:

  • Preheat oven to 400 degrees. Place chicken on foil covered baking sheet. Slice three cuts on top of each chicken breast with sharp knife.
  • Top each chicken breast evenly with salsa, sour cream and tortilla chips.
  • Bake 20 minutes. Remove from oven; sprinkle with cheese. Bake an additional 10 minutes or until chicken is cooked through.

A couple of tips listed on the site:

Use low fat sour cream, baked tortilla chips and reduced fat cheese for a healthier option. :)

Serve with hot cooked rice and a side of corn. Mexican corn would be great!

Party Ham Sandwiches



I got this recipe (and photo) from http://www.kraftfoods.com/. This is great for a shower or just any "get together." You can leave off the onion if you'd like and they are just as good. It just depends on what you like. :)


Here's what you need:


  • 2 pkg. (17 oz. each) attached baked dinner rolls (24 rolls), cut in half

  • 1/2 cup mayo

  • 2 pkg. (6 oz each) Oscar Mayer Deli Fresh Shaved Smoked Ham (this is my favorite but you may also use a different kind).

  • 1 pkg. (8 oz.) Cracker Barrel Cracker Cuts Sharp Cheddar Cheese (you may also just cut off small slices from a block of sharp cheddar cheese)

  • 1/2 small red onion, cut into 24 thin slices

  • 2 tbsp. butter, melted

  • 1 tbsp. Dijon Mustard

  • 1 tsp. poppy seed


Here's what you do:

Heat oven to 350 degrees.

Place bottom halves of rolls in 15x10x1-inch pan; spread with mayo.

Top with ham, cheese, onions and tops of rolls.

Mix remaining ingredients; brush onto sandwiches. Cover with foil.

Bake 20 min. or until heated through.


There ya go. Super easy and so good!

Easy Peanut Butter Cookies

We love cookies around my house. A little too much, actually. Ha! This is a super easy recipe from a book I LOVE called The Four Ingredient Cookbook. The site is http://www.fouringredientcookbook.com/.

These peanut butter cookies are SO good! Plus, you probably have the ingredients to make them right now. :)

Here's what you need:
1 cup crunchy peanut butter (you may also use creamy)
1 egg
1 cup sugar
1 teaspoon vanilla

Here's what you do:
Mix all ingredients and form into 1-inch balls. Press flat on greased cookie sheet with a fork. Bake 10 minutes at 350 degrees.
